We had this a couple days ago and loved it!
Grilled Herbed Pork Tenderloin
From Cooking Light
1/4 cup fresh oregano leaves
1/4 cup fresh sage leaves
1/4 cup fresh orange juice
1/4 cup honey
1 tablespoon coarsely ground black pepper
2 tablespoons grated lemon rind
2 tablespoons grapeseed oil
1/4 teaspoon salt
6 garlic cloves, peeled
2 (1-pound) pork tenderloins, trimmed
1/4 teaspoon salt
Cooking spray
Combine first 9 ingredients in a blender or food processor; process until almost smooth. Pour mixture into a large heavy-duty zip-top plastic bag. Add pork to bag; seal. Marinate in refrigerator 2 hours, turning bag occasionally.
Prepare grill.
Remove pork from marinade. Discard marinade. Sprinkle pork with 1/4 teaspoon salt. Place pork on grill rack coated with cooking spray; cover and grill 25 minutes or until a thermometer registers 160° (slightly pink), turning pork after 15 minutes. Let stand for 10 minutes before slicing.

Garlic-Roasted Lamb with Oregano Pesto

Oregano Pesto
2 1/2 cups spinach
2 cups fresh oregano
1 cup fresh parsley
2 tablespoons grated fresh Parmesan cheese -- (1/2 ounce)
2 tablespoons pistachio nuts
4 teaspoons lemon juice
1/4 teaspoon salt
6 cloves garlic
3 tablespoons extra-virgin olive oil
1 2 1/2 pound leg of lamb
6 cloves garlic -- sliced
1/4 teaspoon salt
1/8 teaspoon pepper
food processor
large broiler pan

Unroll roast, and trim fat. Spread 1 tablespoon Oregano Pesto into the folds of the roast. Reroll roast, and secure at 1-inch intervals with heavy string. Make several 1/2-inch-deep slits in surface of roast; stuff garlic slices into slits. Cut 3 additional 1/2-inch-deep slits in surface of roast; stuff 1 teaspoon pesto into each slit. Spread remaining pesto over surface of roast, and sprinkle with salt and pepper. Place roast on a broiler pan, and insert meat thermometer into thickest portion of roast; set aside.
Remove the white papery skin of garlic, making sure not to peel or separate the cloves. Wrap the garlic head in aluminum foil.
Bake roast at 325° for 1 hour and 15 minutes or until thermometer registers 150° (medium-rare). Let roast stand 10 minutes before slicing.

I was going to suggest pesto too-- I grow lots of fresh oregano spring through fall, and use it in all sorts of dishes, but my favorite is to make pesto. Just make it the way you would any other, maybe throw in some parsley or basil to balance the flavor. Also, o. pesto takes well to the addition of crushed red pepper flakes, a little spark in the green.
if you have a ton, you might want to dry some- -just rinse, pat dry and leave it on the stems till dry-- I put mine in a shallow pan in the gas oven for a couple of weeks, the pilot light does the rest. Just have to remember to move it for preheating-- or you can tie a small bunch of stems together and hang them upside somewhere warm and dry-ish.
I was going to post the exact same recipe that Joe (HealthyinMN) posted. We had it last week, and it was excellent (and very easy). The first night, we had it with roasted green beans, but DH has been eating the leftovers on sandwiches.
I made the Herbed Pork Tenderloin last night and we liked it a lot; I'd give it a solid B, but I think DH would go to B+ or A-. The next time I make it I plan to reduce the amount of honey, and I think I'll slice the tenderloin on the diagonal before marinating.
I served the pork with whipped sweet potatoes and green salad - yum!

personally i would marinate some chicken with lemon juice, garlic, salt and pepper and lots of that fresh oreganoThen you grill them and pair them with the CL herbed basmati rice that also calls for oregano.

I did a pork roast with sauce, pulled the pork & added more sauce & served on buns.........FANTASTIC! Can be done on chicken & seafood too!
Mojo Marinade
3/4 cup fresh orange juice
1/4 cup fresh lime juice
1 teaspoon orange rind, grated
1 teaspoon lime peel, grated
1/2 cup onions, chopped
1/4 cup fresh cilantro, chopped
3 garlic cloves, coarsely chopped
2 tablespoons dried oregano (double if fresh)
1 teaspoon ground cumin
1/2 cup olive oil
salt and pepper, to taste
