I think I'm going to substitute beef stew meat instead and wonder if anyone else had tried this. Also, the recipe says to bake in the oven for an hour, which I find strange for a stew. Has anyone else tried this recipe? Thanks!

Why does everyone always ask me 'How's Married Life' now that I'm married? Did I miss some huge metamorphosis when I became married? I always say 'It's the same as single life, but my left hand is a bit heavier and I have an extra piece of paper to keep track of now' Hidden Content
VERY SPICY~ It was definitely good with the beef stew meat instead of the lamb meat, but I only used a little over 2 tablespoons of chipotle and it was so spicy. I would definitely not use more than 1 Tablespoon next time. Goodness!
