    Anyone tried the Southwest Lamb Stew?

    I think I'm going to substitute beef stew meat instead and wonder if anyone else had tried this. Also, the recipe says to bake in the oven for an hour, which I find strange for a stew. Has anyone else tried this recipe? Thanks!

    Word to the wise...

    VERY SPICY~ It was definitely good with the beef stew meat instead of the lamb meat, but I only used a little over 2 tablespoons of chipotle and it was so spicy. I would definitely not use more than 1 Tablespoon next time. Goodness!

    Oven cooking for the stew is used for even all-round heat distribution-no "hot spots you can get from stove top cooking. I use this method for certain stew recipes. Cooks Ill. uses this method with some of their recipes also. Steph
