I thought this tasted terrible when I first tasted it, and was just about to throw it in the trash. I decided to try and save it with a little salt, and that made a huge difference. After adding some salt I thought it was actually pretty good, but without it it was hardly edible.
I tried this the other night and liked it. I stirred the goat cheese into the pasta (where it melted and helped make the sauce more creamy and flavorful). I probably wouldn't make it again just because it was too time consuming (unless I somehow came across a plethora of red peppers that I needed to use up though). I also think some herbes de Provence might be good in this dish, since to me it's similar to a Roasted Red Pepper soup that I like so much that uses that.
DH wouldn't eat it at all since he hates goat cheese. I stirred the goat cheese in thinking he wouldn't know it was there, but he knew. He ate like three bites and kept saying "it tastes funny - I can't put my finger on it - what is it?" I played dumb and said "too much basil maybe?" "No", he says, "not that". "Maybe too much roasted red pepper?" "No, not that." So I just changed the subject and never told him what it really was. And I ate what was on his plate that he wouldn't eat. And all the leftovers too.![]()

I can try to hide goat cheese in a recipe and she finds it every time. It could be 1 teaspoonful melted into a sauce and her taste bud radar identifies it every time. I don't try to fool her any longer - I just live without the goat cheese...
