    Rev: Giada's Basic Risotto with a twist

    Well, I decided to tackle risotto for the first time yesterday using Giada's basic recipe (from my signed copy of her book ) and then adding veggies. I did have to to omit the wine because I didn't think ahead and didn't have any on hand and they don't sell wine here on Sundays.

    I added in blanched broccoli, diced zucchini, Muir Glen diced tomatoes with basil and garlic, and a can of great northern beans and it turned out wonderfully! I wish I had used a bit less of the veggies since it is now more like veggies with risotto rather than risotto with veggies but I need more in my diet anyhow.

    I have a feeling risotto will be on my menu more often because even with the stirring it was a faily easy and nutritious meal to put together and so flexible!

    Is this from her new book? It sounds wonderful, but I haven't made any of her recipes that weren't wonderful.

    Robyn - I made risotto for the first time ever last month when I made Giada's Dirty Risotto from her new cookbook and I was hooked! I've made it in various forms about 1/2 dozen times since and everyone in my family has grown to love it, plus the leftovers are great, so I share your newfound love of risotto!

    The basic risotto is in her Everyday Italian book, not the new one. I can post the recipe later if you need it and nobody else has it typed up already.
