    ISO Banana Scones recipe

    One of my friends loves a banana and chocolate chip scone she gets from the local farmers market and was wanting to try to make it at home. I was wondering if anyone had anything like it? I found something over at cooks.com but all it was was a list of ingredients. I am going to give her the recipe for Toni's Banana Chocolate Chip Walnut Bread from CL 5/2006 but she really likes scones. Thanks.

    I do have a recipe, however, I am living in temporary housing until we move to PA at the end of the month. All of my cookbooks are in storage - somewhere . If you can wait a few weeks, I will be happy to share. I have made them before and while they were good, I remember them being very sweet.

    These are pretty good - I don't know where the recipe came from...some internet site probably

    Banana Cream Scones

    2 3/4 cups flour
    1 pinch salt
    1/4 cup sugar
    1 teaspoon baking powder
    1/2 teaspoon cinnamon
    1/2 teaspoon nutmeg
    1/2 teaspoon cloves
    1/2 cup butter, chilled & cut in cubes
    2/3 cup heavy cream (I used soy milk)
    2 ripe bananas
    1/2 cup mini-chocolate chips (these aren't in the original recipe)
    3 tablespoons butter, melted (I used about 1 T)
    1 teaspoon cinnamon
    1 cup sugar (I used a lot less than a cup)

    1. Preheat oven to 375.
    2. Combine first 7 ingredients in a bowl.
    3. Add the butter & cut in with pastry blender until mixture resembles fine breadcrumbs.
    4. Mash the bananas,add heavy cream. Mix well.
    5. Combine with flour mixture thoroughly to make soft dough, don't overmix.
    6. If dough is sticky,add a little more flour. If dry,add a little more cream.
    7. Knead briefly on a lightly floured surface,make dough 1/2-inch thick.
    8. Cut into rounds using a 3-1/2 inch cutter& brush tops with melted butter.
    9. Sprinkle generously with the 1 tsp of cinnamon& 1 cup sugar combined.
    10. Place scones at least 2" apart on non-stick baking sheet.
    11. Bake in center of oven about 13-15 minutes or until bottoms are browned.
    12. Serve warm with butter or jam.

    I didn't cut them into rounds - just patted it into one big round and cut that into 8 wedges before baking. I also didn't mix the sugar and cinnamon for sprinkling - just sprinkled on a little sugar and then some cinnamon.

    I really like this recipe - it calls for walnuts, but you could omit them and mix chocolate chips into the dough with the flour.

    Banana-Walnut Scones

    3 cups all-purpose flour
    1/2 cup packed brown sugar
    2 teaspoons baking powder
    1/2 teaspoon salt
    1/4 teaspoon baking soda
    3 tablespoons chilled stick margarine or butter
    1/4 cup low-fat buttermilk
    1 teaspoon vanilla extract
    2 large egg whites
    1 cup mashed ripe banana (about 2 medium)
    Cooking spray
    1/3 cup coarsely chopped walnuts
    1 tablespoon brown sugar

    Preheat oven to 400º.

    Lightly spoon flour into dry measuring cups, and level with a knife. Combine the flour and the next 4 ingredients (flour through baking soda) in a bowl, and cut in the margarine with a pastry blender or 2 knives until the mixture resembles coarse meal.

    Combine buttermilk, vanilla, and egg whites in a bowl, and stir well with a whisk. Add buttermilk mixture and banana to flour mixture, stirring just until moist (dough will be wet and sticky).

    Turn dough out onto a lightly floured surface; with floured hands, knead lightly 4 times. Pat the dough into a 9-inch circle on a baking sheet coated with cooking spray. Sprinkle the walnuts and 1 tablespoon brown sugar over dough, pressing gently into dough. Cut dough into 12 wedges, cutting into, but not through, dough. Bake at 400º for 20 minutes or until golden.

    Thanks, the printer is humming. I did a search on the CL recipe db and that one did not come up for me. Strange!

    Clara, Thanks for posting the CL scones. Nice to have one more option when the brown banans take over the counter, and we really like scones in the cooler weather. (I am surprised I haven't seen this one before on any of the many banana threads)
