    I only tried one new recipe last month - Everyday Food's Espesso Hazelnut Cookies. I won't make them again; they were decidedly nothing special and lacked... something.

    O.K. I'm back. Things seem to be settling down here....

    HOMEMADE WHOLE GRAIN PANCAKE MIX(KAF)

    3 1/2 c. old fashioned rolled oats(12 1/4 oz.)
    4 c.(1#) white whole wheat flour
    1 c.(4 1/4 oz.) all purpose flour
    3 T. sugar
    3 T. baking powder
    1 T. salt
    1 T. baking soda
    3/4 c. vegetable oil

    Grind oats in food processor until they are chopped fine, but not a powder. Combine oats, flours, and remaining dry ingredients in the bowl of a mixer with a paddle attachment. Mix on slow, and drizzle in oil slowly while mixer is running. When all the oil has been added, stop the mixer and squeeze a clump of mix in your hands. If it holds together it is just right. If it won't hold together, stir in 1 T. oil at a time until consistency is correct. Store in airtight container in freezer indefinetely.

    To make pancakes; Whisk together 1 c. mix, 1 c. buttermilk( or 1/2 c. yogurt and 1/2 c. milk), 1 T. O.J., and 1 egg. Don't worry if batter seems thin; the grains will soak up the liquid as it sits. let sit at least 15 min. before cooking.
