Pioneer Woman's Cinnamon Rolls
Has anyone made these rolls? Have you frozen them with the icing? Have you made the icing as in the recipe with the coffee and maple? In her cookbok, she mentions she freezes these with the frosting on after being baked.

Molli, I can't answer your specific questions, but I make cinnamon rolls for the boys teachers each year for Christmas. I think 2 friends and I made more than 60 pans last year. I freeze mine unbaked and I give them that way with the icing in a ziplock bag. The directions call for pulling the pan out of the freezer 30 minutes before you bake them.
I got the recipe I use from Beth. It's her sourdough ones.

This is my go to cinnamon roll recipe. I freeze them unbaked, include the baking instructions along with the icing ingredients. Couldn't be easier!!

Mmmm, PW's cinnamon rolls are wonderful! I froze them baked, but without the icing. I also did not make the icing, as I didn't figure my kids would go for the coffee-maple thing. I just used a simple powdered sugar frosting.
When I wanted them out of the freezer, I would take them out and pop them in the oven at the temp they were baked at for about 15 minutes or so. Add icing and serve warm and gooey.
Oh! I just remembered that a friend of mine made them and put the icing on, then stored them in the fridge. She shared some with me- they were still good, but best when warm and gooey.

I have a recipe that I like a lot, and gave to people frozen, with the directions to let thaw in the fridge overnight and then on the counter while the oven was heating up. I thought giving them pre-baked would be easier. I would try these first before giving them out. I also wouldn't use her icing recipe.

How do you give a teacher frozen cinnamon rolls? Do you give her a cooler as well? I like the idea, but am contemplating the logistics of that....

Last year, both the boys were in preschool, and the teachers had access to a fridge. I would think that DS1's teacher would have access to a freezer in the teacher's lounge. Here, it would also be cold enough to stick them in the trunk of their car on a break as well.

I just made PW's cinnamon rolls and really liked them. I made the icing as written except I put 1 teaspoon of maple extract instead of 1 Tablespoon. You couldn't taste the coffee, and there was just a hint of the maple. I wouldn't want to put any more extract.
I froze the rolls already baked and iced and warmed up a pan for my mom this morning. I put it in a 350 oven for about 15 minutes. It was actually really nice because some of the icing kind of melted into the cinnamon rolls and was very appealing. I liked freezing them already made because then there was no thawing overnight and then baking, (especially for people who have a phobia of baking things), no separate pack of icing to apply once the cinnamon rolls came out of the oven.
I've made many-a cinnamon roll in my day, and these were pretty awesome.

I made these soon after she posted the recipe (was that a couple years ago already?) and we didn't care for them. We found them too sweet and rich and soft. I guess we just prefer a more bready cinnamon roll.

Terri,
I give them frozen and most teachers have access to a freezer at school. For the bus driver and her assistant, I give her a small stryofoam cooler for them to take home their rolls since they don't have easy access to a freezer. I've learned not to give the rolls during the last day of school before a holiday as many teachers have left right from school for their holiday break.
I give the rolls in either the silicone pans that Target sells in their bargain area in the front or the pie pans that Michael's sells. Last year, I bought enough pans on clearance to do this years project. I really better start baking.
