yummy okra recipe to share

I love okra and usually cook it the southern way with tomatoes and either corn, butter beans, or hominy. But I found a new recipe that is sooooooooooo good and easy too!

Sauteed Okra with Garlic and Hot Pepper Flakes
Vegetables Every Day

Like grilling, sauteing whole okra quickly over high heat prevents the formation of the gelatinous texture inside the okra. The strong flavor of okra is a natural with garlic and hot red pepper flakes.

serves 4-6 as a side dish

2 tablespoons extra-virgin olive oil
1 pound small okra (preferably 3 inches long or less), stems removed
2 medium garlic cloves, minced
1/2 teaspoon hot red pepper flakes
salt

Heat the oil in a large skillet. When the oil is quite hot, add the okra and saute over medium-high heat until almost crisp-tender, 3 to 4 minutes.

Stir in the garlic, hot red pepper flakes, and salt to taste. Continue cooking until the okra is crisp-tender and the garlic is golden, about 1 minute. Do not let the garlic burn. Adjust the seasonings and serve immediately.

** A friend gave me some okra and it was all big pods- i just cut them into 3 inch pieces and it worked fine.

** Careful with the salt- this doesn't need much.

Are hot pepper flakes the same as crushed red pepper?

i think so- its the flakey red pepper hot stuff in a jar that sometimes italian pizza places put on the table...

i used penzey's very hot crushed red pepper indian style-

Cheryl have you ever tried cooking okra indian style? It's delicious!!

My okra has been growing like crazy so I've been trying it all different ways. My next try is going to be pickled which I hear is very good!

I love the okra at my indian restaurant!! and i love pickled okra too! never made either.. also used to love fried okra but haven't had that in a while either. just love to play around with my grandmothers recipe.

i wish i had fresh okra out my door!!
