I found the one that I use posted by hAndyman...I use mini-chocolate chips instead of full size-just personal preference!

Chocolate Cheesecake Cupcakes
Topping:
8 oz. cream cheese
1 egg
1/3 c sugar
pinch salt
1 c. chocolate chips
Chocolate batter:
1-1/2 c flour
1 c sugar
1/4 cocoa
1 tsp soda
1/2 tsp salt
1 c water
1/3 c salad oil
1 tsp vinegar
1 tsp vanilla
Cream together cream cheese, egg, sugar and salt. Stir in chocolate chips and set aside.
In large bowl combine flour, 1 c sugar, cocoa, soda and salt. Add wet ingredients and mix well. Fill each muffin paper 1/3 full with chocolate mixture. Drop a large spoonful of cheese mixture on top. Bake at 350 F for 20-25 min or til chocolate part springs back when touched or a toothpick comes out clean. Makes 18-20.
Notes:I sometimes make 1-1/2 times the amount of chocolate batter when a few more cupcakes are needed, otherwise there's a lot of the cream cheese mixture in each cupcake - which isn't really a bad thing - depends on how you like them. I sometimes add about a 1/2 cup chocolate chips to the cake batter when I want even more of a chocolate experience.
This can be made into a delicious chocolate bundt cake with a tangy cream cheese layer in the middle - put 1/2 the cake batter in a greased bundt tin, add the cream cheese batter, spread fairly evenly (or leave it as a thick ribbon in the centre of the bottom layer), and top with the remaining cake batter. Bake at 350 until a cake tester comes out clean.
Cheers! Andy
