Good Morning!
Years ago I had a recipe for chocolate cupcakes with cream cheese and chocolate chips in the middle. They were heavenly. I have not been able to find my recipe -can anyone help me out?

Thanks in advance

Hi Jean,

I think they are generally called "black bottom cupcakes". here is a smitten kitchen blog post with a recipe- http://smittenkitchen.com/2007/06/po...black-bottoms/ or you could google the name and get other recipes.

hANDYman has posted a good black bottom recipe on this board...don't have time right now to do a search myself but will later if it has not been posted when I check back. I have made them several times-yum! Can't remember if he calls for choc chips in his filling but I always put mini cc's in my filling. Have also made it, per his suggestion as a bundt cake-VERY YUMMY!

There was a Chocolate Cream Cupcake Recipe that is really close to what you are looking for that was posted as an ad in CL's October 97 issue. Could that be it?

My notes say it was like a homemade Hostess cupcake

I found the one that I use posted by hAndyman...I use mini-chocolate chips instead of full size-just personal preference!

Chocolate Cheesecake Cupcakes

Topping:
8 oz. cream cheese
1 egg
1/3 c sugar
pinch salt
1 c. chocolate chips

Chocolate batter:
1-1/2 c flour
1 c sugar
1/4 cocoa
1 tsp soda
1/2 tsp salt
1 c water
1/3 c salad oil
1 tsp vinegar
1 tsp vanilla

Cream together cream cheese, egg, sugar and salt. Stir in chocolate chips and set aside.

In large bowl combine flour, 1 c sugar, cocoa, soda and salt. Add wet ingredients and mix well. Fill each muffin paper 1/3 full with chocolate mixture. Drop a large spoonful of cheese mixture on top. Bake at 350 F for 20-25 min or til chocolate part springs back when touched or a toothpick comes out clean. Makes 18-20.

Notes:I sometimes make 1-1/2 times the amount of chocolate batter when a few more cupcakes are needed, otherwise there's a lot of the cream cheese mixture in each cupcake - which isn't really a bad thing - depends on how you like them. I sometimes add about a 1/2 cup chocolate chips to the cake batter when I want even more of a chocolate experience.

This can be made into a delicious chocolate bundt cake with a tangy cream cheese layer in the middle - put 1/2 the cake batter in a greased bundt tin, add the cream cheese batter, spread fairly evenly (or leave it as a thick ribbon in the centre of the bottom layer), and top with the remaining cake batter. Bake at 350 until a cake tester comes out clean.

Cheers! Andy
