Question Leftover Panettone...bread pudding?

HELP! I have a huge panettone leftover from Christmas that I had to open and use, as it was running out of time...LOL.

We toasted it over the w/e...very yummy...now I'm thinking it would be a good base for a bread pudding...anyone have any good recipes??

I'm open to any other idea also

I haven't tried this specifically recipes but Giada has some great ideas to use panettone! (foodtv website has more ideas also!)
Take a look and let us know if you try any of them. Panettone is big during Christmas in Brazil and DS loves it so we always buy them at the end of the year (although I haven't had leftovers yet!).

I was watching the food network show the other day. Bobby Flay made a Chocolate-Coconut Bread Pudding with Passion Fruit Sauce. He didn't win the challenge but it sure looked great. He used a brioche but just about anything can be used as long as it's not too fresh. I think Christmas bread would be considered not too fresh LOL.

Yes, you can use panettone in place of bread in any bread pudding recipe. I use an old BH&G recipe for bread pudding normally, and just sub the panettone for bread cubes. What a treat!
