How many pans of brownies for 30 people?
I like to cut my browies small, esp bc I am doing 4 different flavors of brownies and blondies and people can nibble that way. So figure about 25 brownies per pan--I have 4 8X8s or 9X9s (same amount of batter) so far. Do I need a 5th pan?

I think you're good with 4 pans. I regularly bake brownies for a 3-boat "team" of sailors, and I can feed 'em all with 2 or 3 larger pans.

Hi Laura,
25 brownies per pan at 1.6" square in 8" pan. (Good size)
3 brownie pcs/person (if there is nothing else) = 90 pieces.
4 pans is perfect (and freeze 10 for yourself!  ) .

If the brownies are cut really small I think people might try one of each kind, plus one more of the one they liked best.

What kind of people?
We bake brownies in a 13x9 pan, and my two boys plus a couple of friends would polish off the whole pan. What is this nibbling thing anyway?
But if this is for a bunch of ladies -- you might be okay. Depends on whether they are in the love chocolate of any kind or don't allow it in my house and I feel so deprived crowd or the people might be watching so I can't admit I eat crowd.

Well it is John's dept, so they are not too deprived since they get baked goodies from me a lot. But on the other hand academics seem to eat a lot.

Since brownies freeze well, I would just make another pan and be prepared to throw them in the freezer. Or send them into work with John next week. I think maybe you, like the rest of our family, have a great fear of running out of food when we have guests. So personally I would just make the extra brownies for my own peace of mind, knowing they wouldn't ultimately be wasted. Does that make sense?

I err on the side of more when I prepare food for a group. I'd probably be making at least 2 -- probably 3 13x9 pans. Or one pan and a couple of other kinds of cookies -- but then I get like that.

It does. not sure if I have the freezer space though. It is for tomorrow night--need I freeze them if I make them tonight? Probably not, huh, that would solve all my issues.....

No, I wouldn't freeze them if you are using them in a couple of days.
Not unless you have to hide them from the kids (big or little) that way.

I bake for 30 people every week. Whether I do brownies or cake, I make 2-9x13's...and it seems to be plenty.
