Help! Am having cheesecake *situation*

Not exactly an emergency, but...

Why is it I always have issues regarding cheesecake? Anyway so as some of you may remember I baked this cheesecake today to be toppped with layers tomorrow and frozen to then travel Thursday afternoon up to Columbus and be defrosted overnight to be served on Friday. Whew! So anyway the layers left to do are a layer of dulce de leche and then a layer of bittersweet chocolate ganache. It came out of the oven around 3:15 and cooled enough to cover and place in fridge around 5:45 pm.

My problem is this: I just found out at *&%#ing 5 pm that they are shutting my water off tomorrow until 3 AND then it will not be safe to ingest in any fashion (i.e., including tooth brushing so washing dishes is also making me nervous) until Friday at 5 pm.

How chilled do you think the cheesecake needs to be for the dulce de leche and ganache layers? Could I do them tonight (i.e., while I still have water to clean up)? How long do they need to chill inbetween (I did an hour last time--but could it be less)?

I am so ticked at the water company right now.

ETA I had lots of mad icons in this but they were edited out. What's up with that?!?

Did you already deal with this? I was at a baseball game

I would have done the layers with as much time as possible between them that worked best with my schedule tonight if that makes sense?

Yes am starting now and will have to be up at least another hour to finish. SO MAD AT THE WATER CO.!!!!!

Is the issue the clean up? Or do you need the water for your recipe?

If for the recipe, couldn't you "bottle" some of the tap water now for use later?

No the issue is the clean up--whatever is used will not be cleaned until next Monday. Ewww. Cannot stand the thought. Will not even have water to soak it in til Friday night. And oy the bugs that might come in the summer....

I did the dulce de leche... am going to have to bite the bullet and do the ganache soon....

The cheesecake is probably all done by now, right?

If that happens next time, you could always put the dirty dishes in plastic garbage bag or grocery bag and stick them in the freezer until the water comes back on.

Haha, your freezer must be way emptier than mine! It took re-arranging just to get the cheesecake in there!

Well when I pulled away the sides of the springform pan to wrap it in the plastic this morning the cake seemed ok. It is slightly lopsided from being incorrectly placed in the fridge but I guess I cannot blame that on the water situation. For future reference I guess 5ish hours is enough for a cheesecake to cool for a some layers--but it then chiled overnight before I tried to do anything else with it like remove the sides.

Oh and it turns out a water main broke--I would have felt a lot more charitable toward the water co if they had left that on the message. They made it sound like a pre-arranged water shut down.
