Cupcake Recipe using Self-Rising Flour

In my quest to find the perfect cupcake for the wedding next June I've been testing recipes. My favorite is a Martha Stewart recipe but the bride-to-be isn't sure (she doesn't have cake flour available to her and when she made the recipe she used self-rising and used the leaveners called for in the recipe).

So today I made a recipe using self-rising (recipe called for it) and I hate the way they look and taste...dry and they all cracked...I've never had cupcakes crack.

So I've got the rest of a 5lb of this flour and I'm open to T&T recipes...white cake preferred. TIA!

I'm secretly hoping they all aren't to my liking and I can take the KA cake flour over with me!

My favourite recipe for Pineapple Upside Down Cake comes from King Arthur and uses self-rising flour.

Maybe you could try the batter as cupcakes.

I have those individual Pineapple Upside Down cake pans from NordicWare (similar to cupcakes, I guess), so I've been baking this batter in a similar form. Have found it moist and has great texture.

Definitely no cracking going on.
