Texas Style Pasta Salad-???

A friend was coping some recipes from a really big cookbook and ran across this one that I thought sounded good, so I had her make me a copy also. We had it last night and it was very tasty. I think you could adapt this to meatless fairly well. I wasn't paying attention and didn't drain the RO-TEL and I'm glad I did it that way and will not drain it in the future.

Texas Style Pasta Salad

Amount Measure Ingredient -- Preparation Method

1 (8 ounce) package rotini noodles (plain or tricolor)
1/2 pound ground turkey (white meat, skinless)
1/4 cup chopped onion
1/4 cup Healthy Request Fat-Free chicken broth
1 (1 1/4 ounce) package taco seasoning mix
1 (15 ounce) can kidney, pinto, or black beans, drained and
rinsed well
1 (8 ounce) can whole kernel corn, drained and rinsed well
2 medium tomatoes, chopped finely
1 small green pepper, chopped (optional)
1 cup grated Polly-O Free Mozzarella Cheese (or
other fat-free cheese of your choice)
Dressing:
1 (10 ounce) can RO-Tel Diced Tomatoes and Green Chilies,
rinsed and drained
1/2 cup Fat-Free Italian salad dressing
2 teaspoons sodium-free herb seasoning

Prepare noodles according to package directions. Drain. Brown the ground
turkey and onions in 1/4 cup broth in a non-stick skillet. Add the taco
seasoning mix and cook 2-3 minutes longer. Cool completely in a large
bowl. Combine all the salad ingredients with the ground turkey mixture
and mix well. Add the noodles. In a small bowl, combine the dressing
ingredients and pour over salad and mix gently to coat. Refrigerate until
ready to serve.

serving size: one cup. Serve hot or cold.
