ISO an Chocolate Oatmeal Muffin or Quickbread using Cocoa, no chips

Just thought I would give this a try. I'm looking for a recipe for a muffin or quickbread that combines oatmeal and cocoa powder.

I have tons of oatmeal chocolate chip muffin type recipes but nothing with just cocoa powder. I had a great tasting muffin at a bakeshop, and the only thing I could get out of them is that it had oatmeal and cocoa powder and no chips. I had to buy another one when I was there, all in the name of research.

Oven calling, applecrisp? LOL I found this recipe @ recipezaar, haven't made but it looks good and fits the requirements.

Thanks so much for the recipe. I might have to give it a try.

You pegged me 100% --- I need to work on reviewing my Rollove IRA, filing and other paperwork so I'm looking for a bit of a diversion. I'm thinking by 2:00 tomorrow, I'll need a break. And, I have three canisters of Quaker oatmeal in my cabinet. And, we all know how good oats are for you.

Thanks for the help. I'll report back if I try it and I like it.

Ah, avoidance cooking. My go-to for avoidance is chocolate chip cookies.

Suprisingly, not a chocolate chip to be found in my kitchen right now. Banana bread or oatmeal choc chip cookies are my common go to recipes when procrastinating.

Oh, if you look at another thread, you will see I asked about making applesauce. So that fit the bill today. How virtuous of me, nothing with chocolate.

You can probably omit the peanut butter chips in this recipe.

Fudgey Peanut Butter Chip Muffins

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1/2 c Applesauce
1/2 c Quick-cooking rolled oats
1/4 c (1/2 stick) butter or Margarine, softened
1/2 c Granulated sugar
1/2 c Packed light brown sugar
1 Egg
1/2 t Vanilla extract
3/4 c All-purpose flour
1/4 c HERSHEY'S European Style Cocoa or HERSHEY'S Cocoa
1/2 t Baking soda
1/4 t Ground cinnamon (optional)
1 c REESE'S Peanut Butter Chips
Powdered sugar (optional)

Heat oven to 350 F. Line muffin cups (2-1/2 inches in diameter) with paper bake cups. In small bowl, stir together applesauce and oats; set aside. In large mixer bowl, beat butter, granulated sugar, brown sugar,
egg and vanilla until well blended. Add applesauce mixture; blend well.

Stir together flour, cocoa, baking soda and cinnamon, if desired. Add to butter mixture, blending well. Stir in peanut butter chips. Fill muffin cups 3/4 full with batter. Bake 22 to 26 minutes or until wooden pick
inserted in center comes out almost clean. Cool slightly in pan on wire rack. Sprinkle muffin tops with powdered sugar, if desired. Serve warm. 12 to 15 muffins.
