Bishop's Bread Sub ?

I was intrigued by this recipe in my newspaper and I want to try it but I don't have vegetable juice. Do you think I could thin out some tomato sauce?


BISHOPS BREAD

Makes one loaf (serves 10).

3 cups biscuit mix (i.e.: Bisquick)

1 cup sugar

1/2 cup wheat germ

1 1/2 cups orange juice

3 tablespoons vegetable juice

1 egg

1 tablespoon grated orange zest

1 cup chocolate chips

1/4 cup raisins

1/4 cup halved dried cherries

1/4 cup chopped walnuts

1. Measure biscuit mix, sugar, wheat germ into medium bowl and stir well to blend. In another small bowl, combine orange juice, oil, egg and orange zest and mix well.

2. Add liquid ingredients to blended dry ingredients all at once. Stir just to moisten. Stir in chocolate chips, raisins, cherries and walnuts. Pour into oiled, parchment paper-lined 9- x 5-x 3 inch loaf pan. Bake at 350 degrees degree oven for 55 to 60 minutes or until toothpick inserted in center comes out clean. Cool on rack for 10 minutes and remove from pan.

Don't see why not-- or squeeze a fresh 'mato if you have one-- you could also sub veggie broth or apple juice, the broth being a closer match. but i'm sure either would work-- I'd do it. It's an interesting recipe that I've just nabbed!

This is an old family recipe. Been eating it at Christmas all of my life - not sure where Mom got the recipe.

Where did you find it?

You NEED the O.J. and do not need the Veggie juice (YUK)- the orange flavor/sweetness is important to the recipe with the chocolate.

Use golden seedless raisins.

I have never had it with the wheat germ and have NO idea how that would taste.

I've never had it made with Bisquick and never with tomato juice either, pretty much no liquid but the eggs (lots of eggs)! Also known as Bischofsbrot.

I finally figured out what was bothering me about this recipe. If you read the instructions, there is NO mention of vegetable juice, but there is mention of OIL. So I think the three tbsp is supposed to be vegetable OIL...

Also CANDIED cherries, not dried...

I still think the wheat germ is blasphemy, but to each his own.

It does make good easy teacher gifts - especially when you have multiple teachers to gift (welcome to middle school....)

Good thing I decided against this recipe. Hollysmom, do you have a good tried and true to share. The combination sounds really good and I would love to try it.
