Spice cake mix

I've had a spice cake mix in my pantry for a while now. I know that I must have bought it for a recipe because this isn't something I would normally buy. Anyone have a good recipe to use it??

Some people use it as the base for Paula Deen's Ooey Gooey Bars ... esp. if they use pumpkin in the filling.

I'd prep it as usual and throw it over drained canned peaches or sauteed apples in a well buttered pan. A quick not-quite cobbler.
Or throw a couple handfuls of quick oats into the batter, add 1/3-1/2 C raisins plumped in rum or sherry or water, and make a slightly better cupcake with it.

I‘m not really a cake fan but I really like spice cake even if it comes from a box. On one condition... it needs to be frosted with Penuche frosting or it doesn’t count. I haven’t thought of this recipe for years. I think I got the recipe from my southern grandma. I wasn’t able to find my recipe but this one is very similar.

Penuche Frosting
In a small saucepan melt 1/2 cup margarine or butter; stir in 1 cup packed brown sugar. Cook and stir until bubbly. Remove from the heat. Add 1/4 cup milk; stir until smooth. Add 3-1/2 cups powdered sugar; beat by hand until of spreading consistency. Frost cooled cake immediately. (If frosting thickens, stir in hot water, a few drops at a time, until of spreading consistency again.)

Walnuts on the top layer can make the cake EXTRA SPECIAL!!!

I think that's what my mom used to make with a broiled coconut/brown sugar frosting. I bet that's something she won't get where she's living. I ought to make her one.

It has to be fudge frosting on top! Growing up, it was my kid's most requested cake - spice cake with homemade fudge frosting. Yummm...........!
