Have chopped meat, bl beans, canned tomatoes.....

I have some chopped meat, and the usual canned tomatoes, corn, black beans, onions, pretty typical spices etc. on hand.

I was thinking of perhaps making some chili and freeze the leftovers. Any light chili recipes would be most appreciated. I'm trying to use up things that I have on hand, so pretty basic, ingredient wise, recipes, would be great.

Of course, if you have any non-chili recipes that you like, those would be great too. (Oh, don't have a slow cooker).

Two questions:
1. what is chopped meat?
2. are you looking specifically for something good for freezing?

I really like Tamale Pie (assuming chopped meat is ground meat). CI has a great recipe that I've posted before.

Sorry Canice, it's hamburger/gorund meat. Off topic a bit --- just wondering, do you think the Black Bean and Red Pepper casserole that you posted years back would freeze ok? It's one of my favs and I never have leftovers (I usually split the recipe), but thought I would ask,

I would like to freeze part of what I make for quick meals.

cchhbb -- I'll check for the Tamale Pie. I don't think I've had that before.

Oh, it's "minced beef" as our British friends say . I thought it was maybe meat that had been cooked and diced.
Anyhow, yes - you can freeze the casserole.The tortillas become mushy when you reheat it, but I guess they do anyhow!
