roasted corn? *warning!* dumb question ahead

I recently had an appetizer pizza with roasted corn, bacon, pesto, and brie. I'd like to try to make it at home, but I don't know about the roasted corn part.

We grill corn on the cob all the time in the summer, but it's not summer and we don't have corn on the cob. So...is there any way of say, roasting frozen corn?? What would you guys do?

Not a dumb question at all.

I've thrown corn I've frozen into a very hot skillet with oil and not disturbed it until it was browned and caramelized on the bottom. Then and only then did it get flipped over to brown "other side". It's not quite the same but has more flavor than boiling. I have often thought caramelized corn to have too much flavor for my dish.

If you have a Trader Joe's near you they sell frozen roasted corn. I have also roasted it in the oven until brown...just tossed on a cookie sheet sprayed with Pam/oil.

No question is dumb! Better ask than live in ignorance!
I have also roasted corn just like Sheila did, I put the frozen kernels on a cookie sheet lined with foil, drizzle some olive oil, salt and pepper and put them in the oven (375), it doesn't take long to roast and it tastes so yummy!

I usually just stick it in the oven, unadorned, on a sheet of foil, and roast it at 400F or so, turning it once after the top starts caramelizing.

Cheers,
Phoebe

I also use frozen but defrost on paper towels before adding to a hot cast iron skillet.

I am so glad I asked. I didn't realize I could actually roast corn off the cob in the oven! Thanks everyone.
