Have hummus, sourdough bread -- looking for some new sandwich ideas.

I like to have a hummus sandwich but typically it is pretty basic..... crusty bread, hummus, with tomatoes, cucumbers and perhaps some other veggies.

Just trying to branch out when using hummus (love hummus!) ..... any favorite ways you use hummus, in a sandwich or not.

Thanks.

applecrisp,

Forgot if you're vegetarian, no time to check past posts at this moment...

If not, 200 Best Panini REcipes is awesome! The panini sandwich/panini one by Daniel Leader and Lauren Chattman is good too.

A friend of mine made me a hummus sandwich that I love.

Fill a whole wheat pita with hummus, black olives, chopped tomato, lettuce and cheese. Sprinkle with a little bit of taco seasoning. Add a few pickled pepper rings, if you like them.

She called it a hummus taco. I called it yummy!

I love making my own chips to go with hummus just by spreading a whole wheat tortilla (they hold together better than the white flour ones) with olive oil and sprinkling on salt, pepper, basil, oregano, and garlic. I just bake it for 10 minutes and break it into pieces. It's amazing if you eat it warm with hummus!
