I Want Apple Pie . . . .

DH just got home from having a surprise 5 vessel coronary bypass surgery so I want to make a really low fat pie crust. I know I could use phyllo but I want "real" pie crust. I've been looking at many recipes but want a tried and true one to start off with. I was going to use this KAF recipe pre-bypass (we are usually fat conscious, but have allowed some occasional (OK, maybe more than occasional) fatty treats like regular pie crust)

The ingredients are:
Crust

* 2 cups King Arthur Unbleached All-Purpose Flour
* 3/4 teaspoon salt
* 2 tablespoons buttermilk powder, optional
* 1/2 cup cream cheese (low-fat is fine)
* 10 tablespoons cold butter
* 3 to 4 tablespoons ice water

I can use low fat (actually I was going to try no fat) cream cheese, but now post MI/CAB I feel that 10T butter is too much. I bought some I Can't Believe It's Not Butter for baking today and it looks better than butter, but I'm wondering if anyone has tried it or if someone has a better suggestion.

How about making an apple crisp. No crust involved. Top apples with a mixture of oatmeal, a bit of sugar and spice.

Apple crisp is good-I make it frequently, but I would really like to master low fat pie crust.

I have a good tart recipe, but it uses 8 TB. of butter. Agree that apple crisp would be a much wiser choice. You need to get used to using less fat.

Apple Tart

This recipe sounds a little weird, but tastes great. It's not really a pie, but there's no fat.

Crustless Apple Pie

(Trappe Family Lodge)


(Recipe makes 2 pies)

3 eggs
2 cups granulated sugar

2 cups all purpose flour

1 ½ tsp salt
1 T baking powder
2 -3 cups or 2-3 whole peeled cored apples (chopped)
1 ½ cups walnut or pecan pieces
1 ½ tsp vanilla

Mix all ingredients in order (till mixture can be poured – this will happen when apples are squeezed to mush) using hands!

Pour into 2 greased 9" shallow pie pans.

Bake at 350° for approximately 35 minutes until golden and set.

Serve (warm or room temp) with whipped cream or ice cream.

Freezes well.

Thanks! I know we need to cut back on fat (I'm a cardiac nurse . . .) I still would like a recipe for special occasions.
