Cinnamon Chips: Melting and coating?

Yay, ANOTHER cinnamon chip thread.

I'm hoping to make a vanilla-pumpkin pie variation on the ubiquitous Oreo Truffle for a Thanksgiving potluck at school. Instead of dipping them in chocolate, I hoped to dip them in melted cinnamon chips.

Has anyone used the cinnamon chips as a coating? Any advice?
