Will it keep without freezing?

Due to complicated holiday travel logistics I won't be able to thaw out my sides before I need to stick them in the oven on Turkey day. So here is my question. Can I make my cornbread dressing and a dirty rice dressing tomorrow (Sunday) and keep them in the fridge (not the freezer) until Thanksgiving? Will they be ok just refrigerated for 4 days or do they need to be frozen? I can also make them on Wednesday, but it would just be easier if I could get some of the cooking out of the way tomorrow. Thanks for your help!

Can you just do part of the prep? Like make the cornbread today then cube and freeze, prep the livers for the dirty rice, and also cut up all the veggies (onion, celery, etc)...would be less work on Wednesday but better results I think.
