Does anyone have the new Everyday Food handy?

I need the recipe for the Sweet Potato Chipotle Soup and I'm not at home....I can't find it online either. Thanks for help!

Here's the ingredients to start (wasn't sure if you are just doing a shopping trip)


2 table olive oil
1 med white onion, chopped
coarse salt, ground pepper
2 teasp ground cumin
2 garlic cloves, minced
4 med sweet potatoes (2 lbs total), peeled, cut into 1-inch pieces
1/2 - 1 chipotle chile in adobo, chopped
7 cups low sodium ch broth
sour cream (for serving)
toasted flour tortilla wedges for serving (optional)

serves 8

Here's the rest......


In large dutch oven or heavy pot, heat 1 table oil over med-high.. Add onion, season with salt/pepper, and cook until beginning to brown around the edges, about 7 min.

Add cumin and garlicand cook stirring until fragrant, about 1 min. Stir in sweet potatoes, chile and broth.

Bring to boil, reduce to rapid simmer. partially cover, and cook until swt potatoes can be mashed easily with a spoon, 20-25 min.

Let soup cool slightly. Working in batches, transfer soup to blender and puree until smooth. (use caution when blending hot liquid). Return pureed soup to pot over low heat and season with salt/pepper. Top soup with sour cream and serve with tortilla wedges, if desired.

109 cal, 3.5 g fat

I really just needed the ingredient list, but thanks for the directions too!

applecrisp, you rock. Now my shopping list is complete. =)

We usually have chipotle mashed sweet potatoes (from CL years ago) at Thanksgiving, but I tired of having the 5 starch meal and thought the soup, although still a starch would be a nice replacement.

I'll let you know after Turkey Day how it is. =)

So, I've already made it and it's sitting on low on the stove until we eat this afternoon - it's GOOD! If you like pureed-type soups and you like the chipotle / sweet potato combo, you'll love it. I used 2 peppers and it was too hot, calmed it down with some sour cream and it's fine, so I recommend sticking to 1 chopped chipotle!!! Otherwise - great!
