Many Beets In The Garden - What To Do?

We didn't eat as many beet greens last spring as I thought we would so now we have a surplus of beets. I'm not complaining because they will survive the winter just fine but I'm running out of ideas for their use. After boiling or roasting, what else is left for preparation ideas? Your suggestions would be appreciated.

What a nice predicament to be in. I love fresh beets and they are very pricey here.

Pickled beets might be nice and can be kept around for a while. Delicious on salads, also a nice addition to an antipasti platter. And I hear they are good on sandwiches.

I haven’t tried this Alton Brown recipe but it has very good reviews.

Soup!!! Roasted beet soup is just wonderful when the weather gets colder. We always have a few containers in the freezer for those snowy nights.

I was going to suggest soup too! I like pureed beet soup, you can cook a potato together with the beets so when you puree everything you will get a velvety soup. I love soup!

I have to try to potato. I've always just used sweated leeks and the roasted beets simmered in vegetable, chicken or beef broth. With tarragon, thyme or whatever we have on hand. The potato would give it some great body, what a great tip, thank you!!!

Thanks for all of the great suggestions. Canning isn't really an option because of insufficient storage space. Besides, beets will survive in the ground during our winters. The Alton Brown pickling recipe sounds good as well as the beet cake.
