Question on Stuffing the Bird

The stuffing recipe I am making calls for eggs but does not call for stuffing the bird (but I plan to.) Some of what I've read says to only put cooked food in the stuffing. Am I ok with the eggs as long as the stuffing temp reaches 165 before I pull it out of the oven?

Yep. I stuff my bird, and I try to make the stuffing last, right before I put it in (so its hot). I put eggs in mine, and its fine. Just keep it hot as you are putting it in the bird, and stick it in the oven immediately.

Just don't over pack the bird. You can cook the extra stuffing in a casserole dish.

Btw, dh's family had a cottage on Scituate in the 60s. It's long gone. Beautiful area!

I forgot to ask... do I need to extend the cooking time if I stuff it? I have a 12lb bird and the BA recipe will have me cook it for approximately 3 hours.

We love Scituate. You 'can't get there from here' but once you're here, it's heaven!

Yes, you will need to allow for additional time. It is important that the stuffing be hot so that it gets to the proper temp before the turkey dries out.

Make sure the middle of the stuffing reaches a minimum of 165 °F.

I was sorta shamed into buying what I call the turkey muffler a few years ago.. It's a pipe with a pointy end that you shove in one end and out the other. It gives airflow and extra heat to the stuffing. Although, ya know, I've been around a long time and stuffing made without the muffler has never made anyone ill in my family.

Happy to report that the bird (my first!) and the stuffing came out great, and no one suffered food poisoning!
