Baked Oatmeal

I saw somewhere a mention of baked oatmeal that could be cut and frozen? Does anyone have a recipe for this? Is it as good and healthy as regular oatmeal?? And is it easy to re-heat and get on the table? I'd love to have something good and quick for breakfast in the winter. thanks!!

I think you might be referring to this recipe. It was posted years back by Deanna (see below for the recipe and her comments). I just tried it a few weeks back and I did divide it into individual servings and freeze. There's also a similar CL recipe (I think) but I haven't tried that one. If you search "baked oatmeal" you will see the long thread/comments etc.

I added some chopped/peeled apple to mine. Many omitted the oil. I think I just divided it in 1/2 or so.

Recently I tried this recipe for Baked Oatmeal. Since I live alone, I baked the pan on Sunday, then packaged the remaining in single servings to take to work. It is excellent reheated in the microwave and with a little milk poured over the top.

Of course you can add just about anything you like to this recipe; raisins, dried cherries or cranberries, apricots, fresh blueberries...enjoy!

Baked Oatmeal

Recipe By :
Serving Size : 8 Preparation Time :0:00
Categories : Breakfast

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
2 1/4 cups Quick cooking oats, uncooked
or 2 3/4 cups Old Fashioned oats, uncooked
2/3 cup firmly packed brown sugar
3/4 cup raisins or Craisins
1 teaspoon ground cinnamon
1/2 teaspoon salt -- optional
3 1/3 cups skim milk
4 egg whites -- lightly beaten
(or 1/2 cup egg substitute)
1 tablespoon vegetable oil
1 tablespoon vanilla
fat free milk or nonfat yogurt and fruit -- optional

Heat oven to 350 degrees. Spray 8-inch glass baking dish with cooking spray.

In large bowl, combine oats, sugar, raisins, cinnamon and salt; mix well. In medium bowl, combine milk, egg whites, oil and vanilla; mix well. Add to dry ingredients; ix until well blended. Pour into baking dish.

Bake 55 to 60 minutes or until center is set and firm to the touch. Cool slightly.

Serve topped with milk or yogurt and fruit, if desired. Store leftover oatmeal tightly covered in refrigerator.

There has been a recent thread (or a revival of one) for baked oatmeal recently. I made this particular recipe a few weeks ago and it was delicious. As I recall, it could be divided, frozen and reheated in the microwave.
