Lightbulb Light Jewish Food??? Want to start a supper club using this as the basis?

Can Jewish Food be light? I have one cookbook that claims to lighten the traditional foods, but when I see things like veggie latkes, I know that is not traditional (although they are good!).

So, anyone want to try to start a Jewish supper club in the Portland area? I think it would be a lot of fun. Looking for couples (with or without kids) or singles to have fun exploring a lighter way of cooking Jewish foods (and other foods as well). Would not be a kosher setting.
