Awesome Curry Potato Salad Recipe to Share
I made this tonight and it was excellent (and lowfat too)! This would be a great side dish for a company dinner, very colorful and I liked that it was a little different than the usual potato salad. I found it on the BHG website...the recipe is actually from Ladies Home Journal. Hope you like it!
Curried Potato Salad
Ingredients:
2 pounds all-purpose potatoes, scrubbed (I used small white potatoes)
1 teaspoon cumin seeds
1 teaspoon mustard seeds
1 teaspoon curry powder
1/8 teaspoon ground red pepper
2 tablespoons fresh lemon juice
1 teaspoon grated fresh ginger
1 teaspoon salt
2 tablespoons olive oil
1/4 cup minced red onion
2 jalapeno chiles, seeded and minced (I used one)
1 cup frozen peas, thawed (I used 1/2 cup)
1/4 cup chopped fresh cilantro
Directions:
1. Boil potatoes in salted water, just until tender. Drain. Cool slightly, peel and dice small.
2. Toast cumin, mustard, curry and pepper in small skillet over low heat, until fragrant, 1 minute. Transfer to large bowl. Whisk in lemon juice, ginger and salt, then oil. Add onion, jalapenos and warm potatoes; toss. Cool.
3. Add peas and cilantro. Makes 6 cups.

calories: 80 , total fat: 2.5g , saturated fat: .5g , cholesterol: 0mg , sodium: 246mg , carbohydrate: 13g , protein: 2g

This was great!!!
I made this tonight and served it along with curried chicken salad in whole wheat pitas. It was so good. Thanks for sharing. I will definitely make this again.

Can I ask which Curried chicken salad this is? I'm looking for one to mimic the kind they serve at Atlanta Bread Company (a Panera-like bread place) I LOVE thier curried chicken salad - it's just light on the mayo and has apples and raisins and almonds, I think. Anyone know of some good suggestions?

I don't have a specific recipe I follow for the curried chicken salad. I just throw a bunch of ingredients together that I like. Last night I made it with chicken, celery, green onions, red onion, curry powder, and sliced almonds. I don't like raisins or fruits in my chicken salad.
I love Atlanta Bread Company's regular chicken salad on cracked wheat bread. If I see a recipe similar to the curried chicken salad recipe you are looking for, I'll post it.

Hi Jen! I remember that chicken salad at Atlanta Bread Co. - I had it several years ago (actually the first thing I ever ordered from there), and absolutely loved it... helped to convince me to keep going back there again and again
I haven't had it in a while since I don't do meat that much anymore, but I would love to know if anyone out here as a great recipe for curried chicken salad as well...

Here's one from Barefoot Contessa Family Style that I've been dying to try. I think it looks awesome:
Curried Chicken Salad from "Barefoot Contessa Family Style":
3 whole chicken breasts, bone-in, skin-on.
Olive Oil
Kosher Salt
Black Pepper
1 ½ cups mayo
1/3 cup dry white wine
¼ cup Major Grey chutney
3 Tbsp curry powder
1 cup medium diced celery
2 chopped scallions
¼ cup raisins
1 cup whole roasted salted cashews
Heat oven to 350 degrees. Place chicken on sheet pan, rub skin w/olive oil. Sprinkle with salt and pepper. Roast for 35-40 minutes until just cooked. Set aside. Cover. Remove meat from bone, dice chicken.
Dressing: Combine mayo, wine, chutney, curry powder, 1 ½ tp salt in blender, process until smooth.
Combine chicken and enough dressing to moisten. Add celery, scallions, raisins, mix well. Refrigerate few hours. Add cashews, serve room temp.
To Roast Cashews: Use dry sauté pan med low heat for 5 minutes.

I, too, just caught up with this thread. Thanks! I LOVE the barefoot contessa's show on Food Network and I'm sure this is wonderful.
Now that I've bumped this up, any other suggestions?
