    Cracker Barrel Corn Muffins

    Does anyone have the recipe for Cracker Barrel Corn Muffins? My friend and I had lunch there today, and the muffins were simply delicious.

    Here's the Corn muffin mix (it says it has the recipe on the back of the bag) from Cracker Barrel's web-site:

    Corn Muffin Mix

    Corn muffins like they used to make are what we try to serve in our restaurants every day. Now you can too, with this bit of down-home goodness thatís straight from our kitchen to yours. This 2.1 lb. bag of corn muffin mix will make approximately 48 muffins and includes a recipe on the back.

    Cracker Barrel Corn Muffins

    Serves/Makes: 8 | Difficulty Level: 3 | Ready In: < 30 minutes


    4 tablespoons sugar
    4 tablespoons butter
    4 tablespoons liquid nondairy creamer
    4 tablespoons yellow cornmeal
    3/4 cup self-rising flour

    Add ingredients to bowl in order listed and beat well until it looks like a smooth cake batter.

    Divide batter between 8 greased cupcake wells and fill the other 4 in a 12-well tin with water.

    Bake at 400 degrees F, 16 to 18 minutes or until tester inserted into centers comes out clean.

    Let cool few minutes in pan and remove with two forks so not to disturb the water.
