I made these last night and they are so good and moist. I can't with 100% certainty cite the source, but I believe I clipped it out of a recent Rachael Ray magazine. The recipe called for them to be made into meatballs, but I threw them in a greased muffin tin and baked at 400 for about 30 minutes, then tested the temperature. I'm very much looking forward to my leftover meatloaf sammy for lunch today!
1.25 lb. ground white meat turkey
1/2 c. ricotta cheese
1/2 c. dried bread crumbs
Basil to taste
Salt and pepper to taste
