Can I do this? I'm having a large gathering on Friday, and unfortunately work[school] gets in the way. I would like to make the cheese balls on Wednesday, or maybe even tonight, and freeze them. Maybe I don't have to freeze them?
IMHO, you can make now and serve Fri by just storing in the fridge. There's nothing in them that will turn by Fri. Freezing would ruin the texture, I think. I'm assuming that you use the nuts as an outside coating? I would assemble without the nuts, the toast the nuts and add just before serving. Nuts in contact with moist food over time will get soft and lose their punch.
