    Coleslaw with Sour Cream (Lite) - Seeking Recipe

    I have some light sour cream I would like to use.

    Are there recipes for cole slaw that use sour cream in lieu of mayo -- or as a component?

    I'm not sure what else I would do with the sour cream and I hate to just toss half a container.

    I've always made coleslaw with 1/2 sour cream-1/2 mayo but so no reason why you couldn't just use sour cream. This recipe uses buttermilk in place of mayo and is quite tasty! I actually switch the amounts for the buttermilk and sour cream so the dressing is a bit thicker.

    Thank you. I have some powdered buttermilk which I've never used so I might really get to using up some pantry stuff.

    Super Slaw

    Amount Measure Ingredient -- Preparation Method
    -------- ------------ --------------------------------
    8 cups shredded cabbage
    1 cup chopped onions
    1 cup grated carrots
    1 cup sliced radishes
    1/2 cup vegetable oil
    1/2 cup white vinegar
    1/4 cup granulated sugar
    1 1/2 tsp salt
    1 tsp celery seeds
    1/2 tsp dry mustard
    1/4 tsp pepper
    1/4 cup sour cream


    In large bowl, combine cabbage, onions, carrots and radishes. In small saucepan, combine oil, vinegar, sugar, salt, celery seeds, mustard and pepper; stir over low heat to dissolve sugar. Remove from heat and add sour cream, whisking until smooth.

    Pour dressing over vegetables and mix well. Slaw can be served immediately or chilled before serving; keeps several days in refrigerator. Makes about 8 servings.

    Here is a Baked Lemon Pasta recipe from Pioneer Woman that I can't wait to try! '

    If you have 2 cups of sour cream to use and want something other than coleslaw! You can halve the recipe i'm sure that would work if you have 1 cup leftover.
