Thread: cookie recipe calls for 2 eggs I have 1 now what

    Question cookie recipe calls for 2 eggs I have 1 now what

    WAs right in the middle of making chocolate chip crunch cookies. The recipe calls for 2 eggs and I have only 1 I can't run off to the store. Google says I can substitue 2 Tbs cornstarch for 1 egg in cakes would that work for cookies as well or is there something else I can use as a sub. Thanks

    I'd go with 3 tbs of mayo before using the cornstarch...

    I do have flax seed so I think I'll go with that and I'm a miracle whip not a mayo girl. Thanks so much for the help The cookies are going in a care package to my son in college he thanks you too

    Great. I was afraid I was too late. I hope it works well for you. I've used them with good results when replacing 1 or 2 eggs.

    I also use full fat mayo (if I have it) in a pinch, but I didn’t know about flax seed. I’ll have to remember this for future reference. Thanks for the tip PattiA.

    I also use the flax egg when I need in baking, works well every time!

    Being unfamiliar with either of these egg substitution techniques, I am very curious, how did the cookies turn out?
