Just made the Low-fat eggplant parmesan last night. It was absolutely outstanding! Thanks for everyone giving it the fine reviews. Has anyone successfully frozen the leftovers?
I have frozen eggplant parmesean in the past with no problems.
I haven't done this personally, but a friend of mine does it all the time with no problems.
I've also frozen eggplant parmesan without any problem!! Go for it!!
I made this this week also and agree that it's fantastic. My husband said I could make it again anytime. But as a result, there are no leftovers to freeze in my house.

They turned out great! I only wish that we had more left over to freeze. Maybe I will have to make a double batch next time!
