I bought several bags of baby carrots while they were on sale. Can I freeze them right from the bag or do they have to be blanched first? Once blanched can they still be used in salads?
Yes. You must blanch first before freezing. Make sure they are clean and then drop them into boiling water for about 3-5 minutes. Remove from the water and plunge them into ice water to stop the cooking and set the color. Dry them well. Package them into freezer bags, not the bags they came in. If you decide you want to cut the carrots into smaller pieces, do that before blanching and only blanch for a minute or 2.
I suppose they could be used for salads once thawed, but the texture would be somewhat different. Probably best to use the frozen ones in cooked dishes and buy fresh ones for salads.
And yes they can be used in salads after blanching. In fact that works really well as they become slightly more tender.
