    Canning question - how long do canned green beans keep?

    ok- it is that time of year here in Indiana to get ready to can green beans.

    I still have about 6 jars that are from 2003. The lids are clean - no leakage. I opened 1 and the seal is still intact.

    Question - how long are they good? They were canned approx 2 years ago - July 2003. I hate to have anyone eat them and get sick... but they look fine, smell fine, taste fine, and the seal is still "sealed"

    Ideas?

    IMHO, you'll know it if they're bad. I know they suggest that you eat within one year of home canning but I would eat them. I would make sure that I brought them up to a boil.

    We found 3 jars that the seals let go of and OH MY! was that an awful smell


    DH was out at the garden last night and said we have 6 beans ready. Too cool, I'm ready too!
    You can't drink rum on the beach all day if you don't start in the morning.

    thanks for the info. I agree, I think we would know if they are bad also.

    Hoping to can green beans here next week.
