    Question Freezing lemon bars?

    Does anyone have any experience freezing lemon bars? I have way too many, so I'm wondering if they will freeze well, or if I should try to give them all away.

    Amy--if they're straight lemon bars then yes, I freeze them all the time and they do just fine. I pack them snugly in tupperware, with wax paper between the layers, and they do just fine. I defrost in the fridge.

    However, I have another lemon bar recipe that has a sour cream topping layer--those I have never frozen because I strongly suspect they wouldn't fare well.

    I have a absolute addiction to the lemon bars from Cook's Illustrated. I usually keep at least a dozen in the freezer (if I can stay out of them). But here is the great part - eat them straight out of the freezer and they are the best ever!!! For some reason they don't get hard so its almost like eating lemon ice cream in a crust. My significant other thought I was nuts and after I convinced him to try it I can't keep him out of my freezer!
